These are so yummy. Peter and I may or may not have eaten three pans full in one sitting.
You wash and peel your beets, then slice them very thin.
Toss with some olive oil and salt, and put on a baking sheet lined with parchment paper. Bake at 350 degrees till they are crisp.

they have that whole sweet and salty thing going on that is soooo good. yum.
